This recipe is mini in size which equals to mini amounts of calories! Because it’s all about indulging in baked goods even when you’re on a diet. You can usually find all sorts of recipes for muffins, cakes, cookies etc with the word healthy in it. That doesn’t mean it’s healthy, it’s really just healthier than normal baked goods because of the ingredients these recipes call for. Remember how weight loss articles are always preaching about cutting sugar out of your diet? Yea, not going to happen if you’re still intending to eat all sorts of baked goods.
It’s really not the cake’s fault for needing sugar just for its very existence, blame science for that, because baking is a scientific project. Obviously, for people with the sweet tooth (kind of unfair that girls have it more often than guys), weight loss and sugar is like a train bound for collision. It’s unavoidable.
Rather than indulge like a madman into one of those healthy snacks, cap your consumption but still satisfy your sweet tooth with a smaller proportion. I’m not saying to throw out those healthy recipes, because they sure are still going to serve you well in the long run whether for weight loss or health reasons, instead, cut down the size of the cake and take comfort in the fact that whenever you do bake or eat baked goods, there is going to be a limit already set in place. Less need for self-control, less sadness.
I could make this Mini Blueberry Muffin recipe healthier by using sugar replacement or natural sugar (like they call it), but I don’t really trust those artificial ones. In case you didn’t hear, sugar is still sugar in the end. I might switch to raw coconut sugar or something one day. In the meantime, I think knowing that there’s sugar in the muffin keeps me conscious of what I am really eating. S.U.G.A.R. But in all my recipes, because I am well aware of the sugars, I can mindfully cut down on the sugar and not overload on the artificial or raw sugars because I do not have a misconception of how healthy they are marketed as.
Nonetheless, just baking your own cake and eating it is already one of the best moves in any efforts of weight loss. You are in control of what you eat and how much of it.
Recipe: Mini Blueberry Muffin
|Serves 1-2||Prep Time: 5 Mins||Cook Time: 22 Mins||Total Time: 30 Mins|
3 tbsp spelt flour (or any whole wheat flour)
¼ tsp baking powder
Tiny pinch of salt
1 tbsp sugar (or honey)*
1 – 1 ½ tbsp of blueberries
½ tsp vanilla extract
1 tbsp applesauce *
1 tbsp plus 1 tsp of milk
- Pre-heat oven (the toaster oven is also good enough) to 330 F / 170 C
- Mix all the dry ingredients well.
- Add wet ingredients into dry mix
- Mix until all dry ingredients incorporated
- Bake one bigger muffin or divide it into two
- Bake for 20-22 minutes
- Let it cool down on the rack for 5-10mins before serving.
- If using honey, reduce amount of liquid ingredients. The Mini Blueberry Muffin will also have a honey taste
- The applesauce is a substitute of oil for a almost fat-free muffin, replace with oil if you are not concerned about the extra 100 or so kcal. It’s true that replacing it with oil will essentially make the muffin taste better.
